Ocean Roll

In Japanese, the sea is a single round syllable: umi 海. In the language of an island people, the word carries more than geography. The sea is Japan’s pantry and its road; in the pages of the Man’yōshū, the oldest anthology of Japanese poetry, there are wave sounds, shore people gathering seaweed, boats bound for far islands. The poet of the eighth century and the fisherman of this morning have looked at the same horizon.

Antalya’s horizon opens onto another sea, but the gaze is the same. Like everyone who lives in this city, our kitchen builds its day by looking at the water: what came in today, what is fresh today?

The Ocean Roll is that gaze turned into a plate. The fruits of the sea are layered to the rhythm of a wave; salt, sweetness and freshness break across each bite as if they had just reached the shore. The filling breathes with the season; what never changes is the date the ingredients left the water. That date is always today.

We have no ocean; but between two seas, rolling a roll devoted to the water has never felt difficult.
